Grilled Squid with Caramelized Onion

If you think you can’t enjoy the flavors of the sea on a low-histamine diet, nothing could be further from the truth.

Here’s the recipe for squid with caramelized onion, a combination of flavors you’ll love.

INGREDIENTS FOR THIS RECIPE

  • 2-3 large onions
  • Extra virgin olive oil
  • 9 clean fresh squids
  • Chopped garlic and parsley with oil (avoid if it doesn’t sit well with your body)

INSTRUCTIONS

  1. Peel the onions and cut them into julienne. In a pan, heat a good splash of extra virgin olive oil over medium heat. When the oil is hot, add the onion and stir well so that all the onion mixes.
  2. Avoid the onion from burning and stir occasionally for 35-40 minutes, until the onion takes on a golden color and caramelizes with its own sugars. It is not necessary to add any extra ingredients.
  3. While the caramelized onion is being prepared, clean the squids (remove the gut from the body, the ink bag, the mouth, the eyes, and the skin) and dry them with kitchen paper. If you prefer, you can ask to have them cleaned at the fish market.
  4. In a pan over high heat and with a drop of oil, cook the clean squids with the tentacles for about 2 minutes on each side.
  5. In a dish, place the base of caramelized onion. Place the squids with their tentacles on top and pour a little chopped garlic and parsley over them and add salt to taste for the final touch.

BONUS

  • Go to your trusted fish market and always order fresh and quality products. You will notice the difference in every aspect.
  • You can substitute the chopped garlic and parsley for a simple drizzle of oil and they will be equally delicious.
  • You can also use squid, cuttlefish, or another cephalopod you like or find in your area.

Whether as an appetizer in your meals or as a main course, this dish is simply spectacular.
