White layer. In a bowl, mix half of the coconut milk (250ml), with half of the seeds (25g) and a teaspoon of honey.

Cover the bowl and refrigerate, at least for an hour. During this time the chia seeds will hydrate and swell.

Violet layer. Put the blueberries, a tablespoon of honey, the other half of the coconut milk (250ml), and the seeds (25g) in the blender. Blend until smooth.
[!] If you don’t have a blender, you can also ‘boil’ the ingredients in a pot. The blueberries will soften more easily, and you can use an immersion blender to puree. When you have this ‘jam’, remove from heat and let it cool to room temperature.

In the container or glass you have chosen, serve by layers: first one layer and then another layer. And let it rest in the fridge for 1 hour to settle and take on consistency.

Take out of the fridge, add some blueberries and some shredded coconut as topping.

- If you prefer the coconut to be less present, replace this plant milk in step number 2, with 125 ml of water.
